Since these days before Easter we should eat lean this cake with pumpkin and walnuts is just perfect and also very tasty . I’ve never cooked a cake without eggs and I wasn’t very sure about the result , but honestly finally I was pleasantly surprised . I hope that you will also be !
WHAT YOU NEED :
2 teacups grated pumpkin
1 1/2 teacup sugar
1/2 teacup sunflower oil
1 teacup warm water
1 tsp bicarbonate of soda
3 teacups flour
1 teacup crushed or ground walnuts
1 tbsp cinnamon
WHAT YOU HAVE TO DO :
1.Preheat oven to 180 degrees C . Put the pumpkin and sugar in a bowl and leave for 10 – 15 minutes until sugar is completely dissolved .
2.After that add the sunflower oil , the baking soda which is dissolved in the warm water , walnuts and vanilla + cinnamon . Stir well with a spoon .

3.Gradually add the sifted flour and stir again with a spoon or beat with a mixer .Pour the mixture into a greased and powdered with flour 28 cm baking form . Bake of moderate oven until ready .
